Cucumber Mozzarella Salad is my recipe of the day with the blogging group Sunday Funday. We post weekly, on the same type of recipe topics. This week we are sharing recipes suitable for picnics and summer eating.

Cucumber Mozzarella Salad

This recipe is perfect for picnics since it is oil based. As opposed to a salad with a mayonnaise based dressing, which should be kept chilled to prevent spoilage. We certainly don’t want to risk making our families, friends or guests sick, do we?

I bought a tub of marinated cheese but you could do your own with Italian dressing. Be sure to allow enough time for the marinade to meld the flavors if you do your own. Maybe 6 to 8 hours or overnight. Either way, it adds extra depth of flavor to the salad.

Other than that the salad is pretty simple and comes together quickly. I find it pairs well with sub sandwiches packed cold. Throw in some chips, cold drinks and fresh fruits and you have one very easy picnic.

Ingredients
  

  • 2 cucumbers peeled and chopped
  • 8 ounces marinated bocconcini mozzarella cheese
  • 1/2 cup chopped red onion
  • 3 scallions chopped
  • 1 cup chopped tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 cup marinade oil
  • 1/3 cup red wine vinegar

Instructions
 

  • Drain marinade oil from the cheese and measure. Use half cup in the salad. If you don't have enough, top up with olive oil.
  • If your cheese was in plain brine, drain that and marinate in an oil based Italian salad dressing.
  • Stir together and chill one hour before serving.
