Sandwich:

Instructions
Stir together ingredients for the Caribbean Jerk Sauce and refrigerate until needed.
Pound chicken thin and sprinkle with Cajun seasoning.
Drizzle chicken with oil and grill or saute until cooked through.
Cut chicken into cutlets and coat with jerk sauce.
Serve on a bun with lettuce, tomato and blue cheese dressing.
