Caribbean Jerk Chicken Sandwich

Caribbean Jerk Chicken Sandwich is my recipe of the day. This is a knock-off copycat recipe of the popular sandwich at Buffalo Wild Wings (which we affectionately call “B-Dubs” or “BW3” since it used to be called Buffalo Wild Wings and Weck). I miss the Kimmelweck rolls! (I adore beef on weck!)

I would order this sandwich many times there if I didn’t get wings or their Black & Blue burger. I always loved it. Except the time I bit into it and the thicker part of the chicken was still bloody. Ew. (“Somebunnies” needs a probe thermometer!). But I was out shopping this last week and saw a bottle of the sauce. SO I bought it, brought it home and made my own, so I could taste it side by side.
I am aware there are other copycat recipes out there with which I don’t agree to their selection of ingredients. I’ll let you be the judge of which one you would like to use (if not your own).
The only part of mine I wasn’t thrilled with was the bread. I grabbed rolls at the market. I didn’t see kaiser rolls which I would have preferred so bought some Brioche rolls. The rolls weren’t up to my hopes. A bit too soft and sweet. French bread or hoagie rolls would have done better, if the hoagie rolls aren’t too soft. Ideally, I think you’d want something with a bit more chew than a hamburger bun.
You will likely have sauce leftover from this. Which will keep a couple of weeks in the fridge. Use it on some baked or fried chicken wings. They serve wings at B-Dubs this way as well. Although the sandwich has been discontinued some time back- I think it was replaced by a Nashville Hot chicken sandwich. Oh poo. *laughs* (I hope they at least cook that one done!) Oh don’t mind me. I still like eating there.

Caribbean Jerk Chicken Sandwich
Ingredients
Copycat Buffalo Wild Wings Jerk Sauce (yield one cup):
- 1/2 cup ketchup
- 3 tablespoons apple cider vinegar
- 1 tablespoon habanero pepper sauce
- 1 tablespoon mango Pickapeppa sauce
- 1 tablespoon tomato paste
- 1 tablespoon lemon juice
- 2 teaspoons Worcestershire sauce
- 2 teaspoons black pepper
- 1 teaspoon salt
- 1 teaspoon molasses
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon kitchen bouquet
- 1/4 teaspoon ground ginger
- 1/4 teaspoon grated nutmeg
- 1/2 teaspoon ground thyme
- 1/2 teaspoon ground allspice
- 1/2 teaspoon brown sugar
Sandwich:
- 24 ounces boneless chicken breast
- 2 tablespoons Cajun seasoning
- 4 teaspoons olive oil
- 4 sandwich rolls
- 1 tomato (thinly sliced)
- 4 lettuce leaves
- 4 tablespoons blue cheese salad dressing
Instructions
- Stir together ingredients for the Caribbean Jerk Sauce and refrigerate until needed.
- Pound chicken thin and sprinkle with Cajun seasoning.
- Drizzle chicken with oil and grill or saute until cooked through.
- Cut chicken into cutlets and coat with jerk sauce.
- Serve on a bun with lettuce, tomato and blue cheese dressing.
