Jamaican Jerk Chicken Burger

Jamaican Jerk Chicken Burger is my recipe of the day with the blogging group Eat the World. We post monthly with recipes for different countries, changing each month.
This month we are off to the Caribbean and Jamaica. So if the darkening autumn skies get you down, take a vacay in your kitchen.
I decided on doing a jerk chicken burger with my homemade sauce and chicken patties. In the summer I might grill these outdoors but I opted for the grill pan on the stove top.
You can make these mild or spicy. My husband and I are a bit of chile heads so like it flaming hot with scotch bonnet. But I also cooked for my daughter, who does not eat spicy, so left it out of the sauce. I took mine mild as well to see how it was, while Bill hosed his with hot sauce.
The flavor was great with the pineapple slices. I love those on burgers. It might also be interesting with sliced mango as well if you prefer. Probably not very authentic but we like these with French Fries. You can even use extra sauce to dip instead of ketchup.

Jamaican Jerk Chicken Burger
Equipment
- grill pan or outdoor grill
Ingredients
Jerk Sauce (1 cup):
- 1/2 cup ketchup
- 1 tablespoon dark soy sauce
- 1 tablespoon light molasses
- 1 tablespoon pickapeppa sauce
- 3 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic
- 1 tablespoon grated ginger
- 1 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- scotch bonnet pepper sauce (amount to taste; optional)
Burgers:
- 1 pound ground chicken
- salt and pepper
- sliced red onion
- leaf lettuce
- 3 toasted burger buns
- 3 slices pineapple
Instructions
- Mix together jerk sauce and set aside.
- Make three patties from the ground chicken.
- Season chicken with salt and black pepper.
- Grill patties on an oiled grill or grill pan until done, brushing with jerk sauce and allowing to set.
- Grill pineapple, brushing lightly with sauce.
- Assemble burgers adding extra sauce as desired as a condiment.
