Jerk Sauce (1 cup):

ketchup

tablespoon
dark soy sauce

tablespoon
light molasses
1
tablespoon
pickapeppa sauce

tablespoons
honey
1
tablespoon
apple cider vinegar
1
teaspoon
garlic
1
tablespoon
grated ginger
1
teaspoon
ground allspice
1/2
teaspoon
salt
1
teaspoon
black pepper
scotch bonnet pepper sauce
(amount to taste; optional)
Burgers:
1
pound
ground chicken
salt and pepper
sliced red onion
leaf lettuce
3
toasted burger buns
3
slices
pineapple
Instructions
Mix together jerk sauce and set aside.
Make three patties from the ground chicken.
Season chicken with salt and black pepper.
Grill patties on an oiled grill or grill pan until done, brushing with jerk sauce and allowing to set.
Grill pineapple, brushing lightly with sauce.
Assemble burgers adding extra sauce as desired as a condiment.
