Carrot Halwa (Gajar Halwa)

Ingredients
  

Halwa Ingredients:

  • 1 pound fresh carrots finely grated
  • 4 tablespoons butter
  • 1 cup coconut water sweetened
  • 1/2 cup sweetened flaked coconut
  • 1/4 cup golden raisins
  • 1/4 cup cashews
  • pinch saffron
  • 14 ounces canned sweetened condensed milk
  • 1/4 cup brown sugar or jaggery

Finishing Spices and Flavors:

  • 1/4 teaspoon ground cardamom
  • 1 teaspoon vanilla paste
  • 1/4 teaspoon cinnamon

Instructions
 

  • Combine carrots and butter in a large saucepan and cook until slightly soft.
  • Add remaining ingredients for the halwa and cook over low heat, stirring occasionally, for 45 minutes.
  • You'll stir less at first and just about constantly towards the end.
  • Once thickened, stir in the cardamom, vanilla and cinnamon.
  • Cool down, the chill before serving.
  • Sprinkle with additional raisins, coconut and/or toasted cashews as a garnish if you like.
