Halwa Ingredients:

pound
fresh carrots
finely grated

tablespoons
butter

cup
coconut water
sweetened
1/2
cup
sweetened flaked coconut
1/4
cup
golden raisins
1/4
cup
cashews
pinch
saffron

ounces
canned sweetened condensed milk

brown sugar or jaggery
Finishing Spices and Flavors:

teaspoon
ground cardamom

teaspoon
vanilla paste
1/4
teaspoon
cinnamon
Instructions
Combine carrots and butter in a large saucepan and cook until slightly soft.
Add remaining ingredients for the halwa and cook over low heat, stirring occasionally, for 45 minutes.
You'll stir less at first and just about constantly towards the end.
Once thickened, stir in the cardamom, vanilla and cinnamon.
Cool down, the chill before serving.
Sprinkle with additional raisins, coconut and/or toasted cashews as a garnish if you like.
