Equipment

  • Oblong casserole dish (lasagna pan)

Ingredients
  

  • 12 ounces evaporated milk
  • 10 ounces fresh broccoli florets
  • 2 cups uncooked Instant rice
  • 2 cups chicken broth
  • 1 teaspoon minced garlic
  • 1/2 teaspoon black pepper
  • 10-3/4 ounce can condensed cream of chicken soup undiluted
  • 10-3/4 ounce can condensed cheddar cheese soup undiluted
  • 6 tablespoons melted butter
  • 36 Ritz crackers crushed 3 small packs
  • 12 ounces white cheddar and Parmesan blend cheese shredded

Instructions
 

  • Preheat oven to 350F.
  • Simmer broccoli in evaporated milk until tender (about 10-15 minutes).
  • Add broccoli with milk into a mixing bowl, stirring it up with uncooked rice, broth, garlic, pepper, and condensed soups.
  • Place in an oblong casserole dish sprayed with nonstick spray.
  • Top with shredded cheese.
  • Toss crushed crackers with butter and sprinkle over the top.
  • Bake for 25 minutes or until hot.
