Equipment

Ingredients
  

Avo Toast:

  • 4 slices sourdough toast
  • 1/4 cup tahini
  • 1 ripe Hass avocado
  • 2 cups microgreens or watercress sprouts
  • 3 tablespoons Trader Joe's chili onion crunch
  • 4 eggs cooked sunny side up

Pickled Raisins:

  • 1/4 cup golden raisins
  • 1/4 cup apple cider vinegar
  • 2 tablespoons granulated sugar

Dukkah:

  • 1/4 cup toasted walnuts
  • 1 tablespoon toasted sesame seeds
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon anise seed

Instructions
 

Pickled Raisins:

  • Stir sugar into vinegar and bring to a boil.
  • Pour over raisins and allow to cool; refrigerate for at least one hour but better overnight.

Dukkah:

  • Stir together the dukkah and set aside.

Avo toast:

  • Toast bread and per each piece, top with one tablespoon tahini.
  • Cover tahini with thin slices avocado, 1/4 avo per slice.
  • Top with microgreens or watercress sprouts.
  • Top greens with a freshly fried sunny up egg.
  • Sprinkle with pickled raisins, dukkah, and a bit of chili onion crunch, including some of the spicy oil.
