Ingredients
  

  • 1 cup uncooked farro
  • 1/2 cup dried cranberries
  • 1/2 cup chopped toasted walnuts
  • 1 cup chopped baby kale
  • 2 scallions sliced
  • 1/3 cup diced Swiss cheese
  • 1/4 cup roasted pepitas green pumpkin seeds
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup orange juice
  • 2 tablespoons red wine vinegar
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper

Instructions
 

  • Cook farro according to package directions and drain.
  • Toss cooked farro with remaining ingredients.
  • Serve chilled.
