Fig Bites in Phyllo Cups fills crispy pastry cups with soft chevre, dried fig, and sweet orange marmalade for an easy bite sized treat.

Equipment

  • 1 baking pan

Ingredients
  

  • 1.9 ounce box frozen phyllo mini shells 15 count; thawed
  • 4.3 ounces soft goat cheese chevre
  • 4 dried figs quartered
  • 1/4 cup orange marmalade melted
  • 2 sprigs fresh rosemary chopped

Instructions
 

  • Preheat oven to 350F.
  • Place thawed phyllo shells on a small baking tray.
  • Divide goat cheese among shells.
  • Cut figs and place one fourth of each one into the goat cheese.
  • Spoon a small amount of melted marmalade over the top (I melted the marmalade in the microwave until runny).
  • Sprinkle with minced fresh rosemary either before or after baking (doing it after might preserve more of the green color, however less of the flavor will permeate. You decide.)
  • Bake for twelve minutes.
  • Allow to cool a few minutes before serving.
