Equipment

Ingredients
  

Hanbaga:

  • 1 pound lean ground beef
  • 1/2 cup red onion (minced)
  • 1/2 cup daikon radish (minced)
  • 2 teaspoons grated ginger root
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg (lightly beaten)
  • 1 cup panko bread crumbs

Sauce:

  • 1/2 cup water
  • 2 tablespoons mirin
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 4 teaspoons soy sauce
  • 2 teaspoons granulated sugar

Extra:

  • 8 ounces whole mushrooms (trimmed and quartered)
  • 1 tablespoon toasted sesame seeds (garnish)

Instructions
 

  • Combine ingredients for burgers and let rest for about ten minutes.
  • Meanwhile, stir together the sauce in a small saucepan and simmer until thickened.
  • Cook the burgers in a nonstick skillet until browned on both sides.
  • Add 1 cup water and the mushrooms and continue to cook until the water evaporates and the burgers are cooked through (about 165F).
  • Serve with sauce spooned over and sprinkled lightly with toasted sesame seeds.
