Saute the onions, celery. herbs, salt and pepper in butter until soft.
Combine with the bread cubes by tossing lightly, adding broth to moisten, and place in an oblong baking pan.
Cover with foil and bake at 375F. for 45 minutes, stirring halfway through cooking.
You can bake this in the chicken or turkey by packing lightly. When your meat is done, remove the stuffing and continue baking that until its temperature is 170F.
