butter

nutmeg

ground cloves
Instructions
Preheat oven to 350F.
Peel sweet potatoes into medallions or chopped into chunks (if from larger potatoes).
Place yams in cider and water with salt and cinnamon sticks; bring to a boil then reduce heat to simmer for 12 minutes.
Lift out potatoes and place in a 1.5-quart buttered casserole dish and set aside.
Take 1-1/2 cups of the cooking water (discard the rest) and return to pan with the cinnamon sticks.
Stir in 3/4 cup brown sugar; simmer and reduce until syrup measures one cup.
Stir in the butter, nutmeg and cloves.
Pour syrup over sweet potatoes.
Cover dish with foil and bake for 30 minutes, then remove foil and bake for 30 minutes more.
