Old-Fashioned Candied Yams are a version of cut sweet potatoes in syrup, to be eaten as is or used in other recipes. Like Bruce's brand canned candied yams

Ingredients
  

  • 1-3/4 pounds skinny sweet potatoes
  • 2 cups water
  • 2 cups apple cider
  • pinch salt
  • 2 4-inch cinnamon sticks
  • 3/4 cup brown sugar
  • 1 tablespoon butter
  • pinch nutmeg
  • pinch ground cloves

Instructions
 

  • Preheat oven to 350F.
  • Peel sweet potatoes into medallions or chopped into chunks (if from larger potatoes).
  • Place yams in cider and water with salt and cinnamon sticks; bring to a boil then reduce heat to simmer for 12 minutes.
  • Lift out potatoes and place in a 1.5-quart buttered casserole dish and set aside.
  • Take 1-1/2 cups of the cooking water (discard the rest) and return to pan with the cinnamon sticks.
  • Stir in 3/4 cup brown sugar; simmer and reduce until syrup measures one cup.
  • Stir in the butter, nutmeg and cloves.
  • Pour syrup over sweet potatoes.
  • Cover dish with foil and bake for 30 minutes, then remove foil and bake for 30 minutes more.
