Equipment

  • 1 Slow Cooker or Crockpot

Ingredients
  

  • 3 tablespoons oil
  • 3 lb stew beef cut into chunks
  • 1 large onion chopped
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 tablespoons chopped garlic
  • 1 teaspoon dried oregano
  • 1 tablespoon ground cumin
  • 2 tablespoons chili base
  • 28 Oz canned whole tomatoes
  • 28 oz tomato puree
  • 3 tbsp chili powder
  • 1 tsp cayenne pepper
  • 2 cups chopped roasted Hatch Chiles
  • 2-15 oz cans kidney beans

Instructions
 

  • Brown the beef, onions and oil first if you like more flavor.
  • Add the brown beef to the crock pot.
  • Stir in the seasonings and everything through the tomato puree.
  • Begin cooking on the low setting for 8 hours.
  • Halfway through cooking at the remaining chili powder cayenne pepper and hatched chilies.
  • 30 minutes before serving at the kidney beans and stir.
  • Check for salt amounts before serving and adjust if needed.
