Ingredients
  

  • 1/2 cucumber peeled and thinly sliced
  • 8 ounces iceberg lettuce
  • 12 ounces large cooked peeled shrimp
  • 1/2 ounce shredded fresh ginger
  • 1 ounce thinly sliced onion
  • 1 tablespoon minced lemongrass
  • 1-2 fresh Thai chilies thinly sliced (optional)
  • 1/4 cup roasted chopped peanuts
  • 1/4 cup chopped scallions
  • 1/4 cup cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup water
  • 2 tablespoons Thai sweet chili sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon fish sauce
  • 1/4 teaspoon garlic paste

Instructions
 

  • Whisk together the water, chili sauce, brown sugar, vinegar, fish sauce and garlic.
  • Place lettuce in a dinner sized salad bowl (or on a plate) and arrange shrimp and other salad ingredients on top.
  • Pour dressing over and serve.
