box strawberry gelatin mix

granulated sugar

corn starch

teaspoon
red food coloring
1
teaspoon
fresh lemon juice
2
quarts
ripe strawberries
trimmed

cups
whipped cream
more or less
Instructions
Crust:
Preheat oven to 375F.
Line pie plate with crust and crimp edges. Dock the dough with a fork, then line with parchment and baking weights.
Bake for 30 minutes then allow to cool and remove parchment and pie weights.
Filling:
While pie crust cools, place water in a saucepan with the jello mix, sugar, corn starch, red food coloring, and lemon juice.
Bring mixture to a boil and cook, stirring constantly until filling begins to thicken. Remove from heat and cool to room temperature.
Berries:
As filling cools down, trim and quarter strawberries and prepare whipped cream.
Place one cup of the filling into the bottom of the pie crust.
Stir the remaining filling into the strawberries and add to the pie.
Chill the pie until the filling is gelatinous and firm.
Top with whipped cream as desired.
Slice and serve.
