Strawberry Glaze Pie

Ingredients
  

  • 1 single pie crust prebaked
  • 1 cup water
  • 3 ounce box strawberry gelatin mix
  • 1/2 cup granulated sugar
  • 6 tablespoons corn starch
  • 1/4 teaspoon red food coloring
  • 1 teaspoon fresh lemon juice
  • 2 quarts ripe strawberries trimmed
  • 2 cups whipped cream more or less

Instructions
 

Crust:

  • Preheat oven to 375F.
  • Line pie plate with crust and crimp edges. Dock the dough with a fork, then line with parchment and baking weights.
  • Bake for 30 minutes then allow to cool and remove parchment and pie weights.

Filling:

  • While pie crust cools, place water in a saucepan with the jello mix, sugar, corn starch, red food coloring, and lemon juice.
  • Bring mixture to a boil and cook, stirring constantly until filling begins to thicken. Remove from heat and cool to room temperature.

Berries:

  • As filling cools down, trim and quarter strawberries and prepare whipped cream.
  • Place one cup of the filling into the bottom of the pie crust.
  • Stir the remaining filling into the strawberries and add to the pie.
  • Chill the pie until the filling is gelatinous and firm.
  • Top with whipped cream as desired.
  • Slice and serve.
