Strawberry Glaze Pie is my recipe of the day for the blogging group Sunday Funday. We post recipes weekly on each Sunday on a common topic. This week we are sharing favorite recipes for desserts.

I am offering my recipe for this retro pie which restaurants have enjoyed serving for decades. Around here, Big Boy markets individual tarts of these as “Pie Babies”.
Of course, you can buy strawberry glaze in most grocery stores. Unless you care to make it yourself. It is an easy enough endeavor.
You can even make the glaze ahead to save time. In that case, it may thicken up, but you can thin it just enough with water, mix with berries and fill the pie. That will save on chilling after as you can then serve it right away.

Strawberry Glaze Pie
Ingredients
- 1 single pie crust prebaked
- 1 cup water
- 3 ounce box strawberry gelatin mix
- 1/2 cup granulated sugar
- 6 tablespoons corn starch
- 1/4 teaspoon red food coloring
- 1 teaspoon fresh lemon juice
- 2 quarts ripe strawberries trimmed
- 2 cups whipped cream more or less
Instructions
Crust:
- Preheat oven to 375F.
- Line pie plate with crust and crimp edges. Dock the dough with a fork, then line with parchment and baking weights.
- Bake for 30 minutes then allow to cool and remove parchment and pie weights.
Filling:
- While pie crust cools, place water in a saucepan with the jello mix, sugar, corn starch, red food coloring, and lemon juice.
- Bring mixture to a boil and cook, stirring constantly until filling begins to thicken. Remove from heat and cool to room temperature.
Berries:
- As filling cools down, trim and quarter strawberries and prepare whipped cream.
- Place one cup of the filling into the bottom of the pie crust.
- Stir the remaining filling into the strawberries and add to the pie.
- Chill the pie until the filling is gelatinous and firm.
- Top with whipped cream as desired.
- Slice and serve.

This has always been my absolute favorite pie for summer.
A different kind of strawberry pie for me, Sue.. with strawberry gelatin, perfect summer time dessert. One which can be made ahead and enjoyed for garden parties.
Sue this pie is so delicious and so different. I am bookmarking this recipe will definitely try it in November when we get strawberries.
