Equipment

  • 2 -1/2 cup baking ramekins

Ingredients
  

Keto French Toast:

  • 2 egg
  • 2 tablespoon melted cooled butter
  • 6 tablespoons almond flour
  • 1 teaspoon baking powder

Strawberry Filling:

  • 4 ounces cream cheese
  • 1/4 cup chopped strawberries
  • 1 tablespoon Swerve granular erythritol

Sprinkle:

  • 1 teaspoon Swerve confectioner's blend
  • 2 tablespoons Da Vinci sugar-free vanilla syrup or other sugar-free vanilla syrup

Instructions
 

  • Butter 2 individual (1/2 cup capacity) ramekins.
  • Combine ingredients and pour half into each ramekin.
  • Microwave each for 90 seconds.
  • Slice each bread in half and griddle in a nonstick sprayed skillet until golden.
  • Mix strawberries with softened cream cheese and Swerve or sweeten to taste with whatever you're using for sugar.
  • Sprinkle with a little more Swerve and drizzle with syrup.

Notes

Note: if you like, just make the French Toast and use sugar-free maple syrup for regular flavor.
