Taco Noodle Hot Dish

Ingredients
  

  • 3 cups uncooked macaroni cooked and drained
  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 cup fresh cut corn or frozen corn
  • 1/2 teaspoon each salt and black pepper
  • 2 tablespoons packet taco seasoning
  • 15 ounce can diced tomatoes and green chilies
  • 1 cup canned black beans rinsed and drained
  • 8 ounces tomato sauce
  • 8 ounces 4-cheese Mexican shredded cheese blend

Instructions
 

  • Preheat oven to 375F.
  • Cook macaroni according to package directions and drain.
  • Brown the ground beef with the onion and corn; drain off fat.
  • Season with salt, pepper and taco seasoning, then add tomatoes, black beans and tomato sauce and heat through.
  • Combine cooked macaroni with sauce in a large mixing bowl and place in an oblong casserole dish that has been sprayed with nonstick spray or lightly greased.
  • Sprinkle cheese over the top.
  • Bake about 25 minutes or until hot and bubbly and cheese has melted.
