Equipment

  • 1 set pie weights
  • 1 pie pan

Ingredients
  

  • 1 single pie crust
  • 1 cup mini semi-sweet chocolate chips
  • 1/2 cup butter (melted and hot)
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup flour
  • 1/4 cup baking cocoa
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon salt
  • 2 large eggs (lightly beaten)
  • 1-1/2 cups chopped pecans

Instructions
 

  • Preheat oven to 350F.
  • Fit pie crust into pie pan and flute edges; line with parchment and pastry weights or dried beans; par-bake the crust 15 minutes then allow to cool.
  • Place chocolate chips in a heatproof mixing bowl. Melt butter and pour over the chocolate chips while very hot.
  • Whisk chips until melted.
  • Add remaining ingredients except pecans and mix until smooth.
  • Fold pecans into mixture and then spread into the pie crust.
  • Bake for 30-35 minutes until mostly set.
  • Allow to cool completely. Serve with whipped cream or ice cream if desired.
