Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • 1 large onion chopped
  • 2 medium zucchinis diced
  • 2 ears corn kernels cut off
  • 14.5 ounces canned diced tomatoes
  • 3 cups beef broth
  • 15.5 ounces canned kidney beans
  • 2 teaspoons ground cumin
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 4 Tablespoons cornstarch
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon chopped cilantro

Instructions
 

  • Saute onion and garlic in olive oil in a large saucepan or soup pan.
  • Add remaining ingredients and simmer gently for about 30 minutes.
