Traeger Bacon Cornbread

Equipment

  • 8-inch square disposable aluminum baking pan
  • Baker's release spray

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 large egg lightly beaten
  • 1/4 cup bacon grease
  • 8.5 ounce can creamed corn
  • 1/2 cup buttermilk
  • 6 slices bacon cooked crisp and crumbled

Instructions
 

  • Preheat Traeger pellet grill to 375F.
  • Spray disposable pan with Baker's release spray or grease liberally and set aside.
  • Mix together ingredients for cornbread and spread evenly in pan.
  • When smoker is preheated, place the pan in the smoker with the smoke setting on.
  • Bake in the smoker without lifting the lid for thirty minutes or until a toothpick test shows no wet batter.
  • Slice into six pieces.
