Warm Potato Salad with Kielbasa is a tangy warm potato side dish seasoned with Kielbasa or smoked sausage. Perfect alongside chops, bratwurst, or sauerbraten.

  • Large saucepan; salad bowl

Ingredients
  

  • 2 lb diced red potatoes
  • 3 tbsp olive oil
  • 1 teaspoon salt
  • 1 tsp black pepper
  • 1 teaspoon garlic
  • 1 tbsp oil
  • 1 cup diced red onion
  • 12 oz smoked sausage diced
  • 1 teaspoon caraway seed
  • 5 tbsp sugar
  • 1/4 cup warm water
  • 1/2 cup cider vinegar
  • 1 tablespoon Italian parsley
  • 1 tablespoon dried chives
  • 1/2 cup sliced scallions

Instructions
 

  • Cook until potatoes are tender about 15 minutes in boiling water. Drain.
  • Season potatoes with s&p and garlic.
  • Whisk sugar with warm water and vinegar until completely dissolved.
  • Cook for about five minutes to thicken dressing.
  • Brown sausage, caraway seed and onion in oil until sausage is lightly browned.
  • Add to potatoes and dressing.
  • Stir in parsley and chives.
  • Serve warm.
