Instructions
Preheat oven to 325F.
Spray a one pound loaf pan with Baker's Release spray.
Stir together the brown sugar, vegetable oil, eggs, and vanilla paste until smooth.
In another bowl stir together the flour, pecan meal, salt, baking soda, cinnamon, nutmeg and cloves.
When stirred up add the apples to the flour mixture and stir to coat.
Then combine the wet and dry mixtures and place the batter in the prepared loaf pan.
Top the batter with the chopped pecans.
Bake 60-70 minutes or until a toothpick can be removed without wet batter.
Cool in pan 15 minutes, then turn out and finish cooling on a wire rack.
