The apple pecan loaf is not quite as dense or heavy as some apple breads. Which can be overly moist. I wanted this bread to have a stupendous amount of pecans in them. So I used both the meal and the chopped ones on top.
The color is interesting because it almost looks like I added molasses. Which is a yummy idea, but I did not. That has to be all coming from spice and the color using pecan meal adds.
If you don’t have any pecan meal, you can make your own by pulsing pecans in a food processor until they are fine crumbs. Just don’t overdo it or you will end up with pecan butter.

Apple Pecan Loaf
Equipment
- loaf baking pan
Ingredients
- 1 cup Dixie Crystals brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons Taylor and Colledge vanilla paste
- 1-1/2 cups all-purpose flour
- 1/2 cup Millican pecan meal
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1-1/4 cups grated apples
- 1/2 cup Millican chopped pecans
Instructions
- Preheat oven to 325F.
- Spray a one pound loaf pan with Baker's Release spray.
- Stir together the brown sugar, vegetable oil, eggs, and vanilla paste until smooth.
- In another bowl stir together the flour, pecan meal, salt, baking soda, cinnamon, nutmeg and cloves.
- When stirred up add the apples to the flour mixture and stir to coat.
- Then combine the wet and dry mixtures and place the batter in the prepared loaf pan.
- Top the batter with the chopped pecans.
- Bake 60-70 minutes or until a toothpick can be removed without wet batter.
- Cool in pan 15 minutes, then turn out and finish cooling on a wire rack.
