Apple Cider Syrup Bundt is my recipe of the day with the blogging group Bundt Bakers. We get together monthly to share our newest and favorite Bundt cake recipes.

I am hosting this month and thought it might be different to share some syrup cake recipes. In this event, it wouldn’t have to be soaked in but also mixed in for flavor.
With my cake I used a soaker type where the syrup is spooned over the top.
I was going to have this with dried apples. But somehow forgot my leavening when I baked the cake. Then when I saw how flat it was I said some bad words I won’t repeat here.
I thought it would be easy enough to get to the store to buy some more dried apples. But the type I needed were out of stock (covid). Yet they did have a ton of freeze dried apples which were not what I wanted at all.
Undeterred, I pivoted to using applesauce. And adjusting the batter a little bit to account for that. Baking recipes are formulas after all. Which doesn’t mean baking recipes can’t be tweaked. But obviously you need to stick to ratios.
The end result is very good indeed. I’d say it’s my best apple cake, but I say that about all apple cake. It is something I enjoy making every autumn season in one form or another. I just need to make sure I get some pies made too, because I love those.

Apple Cider Bundt Cake
Equipment
- 10-inch Bundt pan
Ingredients
Cake:
- 1 cup soft unsalted butter
- 2 cups granulated sugar
- 3 large eggs
- 1 cup unsweetened applesauce
- 2 teaspoons vanilla
- 2-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
Syrup:
- 1/2 cup apple cider
- 3/4 cup brown sugar
- 2 teaspoons butter
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon Watkins cinnamon extract
Decor:
- Bob's Red Mill Coarse Sparkling Sugars as needed
Instructions
- Preheat oven to 325F.
Cake:
- Spray a 10-cup Bundt pan with Baker's release spray or grease and flour.
- Cream together the butter and sugar in an electric mixer fitted with a paddle attachment.
- Add eggs one at a time, then add in the applesauce and vanilla.
- Sift together the flour, baking powder, salt, baking soda, cinnamon, nutmeg and cloves.
- Gradually add mixture to the mixer, continuing to run until you have a smooth batter.
- Spread batter evenly into the Bundt pan and bake for 50 minutes or until it tests done with a toothpick.
- Cool in pan 15 minutes, then turn out to begin cooling on a wire rack.
Syrup:
- Place cider and sugar in a saucepan and cook over low heat until thick and syrupy, about 10 minutes (mixture should reduce to around 3/4 cup); stir in the extracts after removing from heat and allow to cool.
- Put a plate beneath the cake on the wire rack and slowly drizzle the cake with syrup being careful not to do it to quickly so the syrup doesn't run off.
- Sprinkle liberally with coarse crystal sugars for a sparkling decor.
