Baked Beans and Cottage Ham

Equipment

  • Dutch oven or deep oven safe pot with llid

Ingredients
  

  • 3 pound smoked bone-in pork shoulder picnic (cottage ham)
  • 1 cup chopped onion
  • 1 cup diced celery
  • 1 green bell pepper (chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon each salt and black pepper
  • 1 tablespoon chopped garlic
  • 2 tablespoons molasses
  • 1 teaspoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 28 ounces canned baked beans

Instructions
 

  • Preheat oven to 325F.
  • Saute the onion, celery and bell pepper in the oil in a small skillet until softened.
  • Stir those in a mixing bowl with all other ingredients except cottage ham.
  • Place bean mix in a dutch oven and put the cottage ham on top, fatty side up if possible.
  • Cover and bake for 2.5 hours or so or until thick.
  • Slice ham pieces off the bone and serve on beans or stir in, whichever you prefer; discarding the bone.
