Baked Beans and Cottage Ham is my recipe of the day with the blogging group Improv Cooking Challenge. We’ve been challenged to put some pork and molasses together.

I had a cottage ham sitting in the fridge and a couple cans of baked beans so had it. Pork and beans….deluxe.
Cottage hams are also known as smoked butts. They are very similar to ham but come from a different place on the pig. The shoulder is often known for being the meat in pulled pork. However, this cottage ham is small and smoked without the benefit of becoming barbecue.
My husband’s family was big on making the cottage ham as he grew up. They had a small family so it made do as a ham. My family a little bigger so we didn’t really have these. But after getting married, my family was small so I took this up as a cooking item. They can be as versatile as you like.
I do enjoy dropping them into some doctored beans and making it into a supper. Some corn bread and a salad rounds out the simple meal. Later, in small portions, the leftovers make a great side dish for things like barbecue, burgers, and more. Or if you have a need for lots of side, skip the main dish part and just go for making this your side dish.

Baked Beans and Cottage Ham
Equipment
- Dutch oven or deep oven safe pot with llid
Ingredients
- 3 pound smoked bone-in pork shoulder picnic (cottage ham)
- 1 cup chopped onion
- 1 cup diced celery
- 1 green bell pepper (chopped)
- 1 tablespoon olive oil
- 1 teaspoon each salt and black pepper
- 1 tablespoon chopped garlic
- 2 tablespoons molasses
- 1 teaspoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 28 ounces canned baked beans
Instructions
- Preheat oven to 325F.
- Saute the onion, celery and bell pepper in the oil in a small skillet until softened.
- Stir those in a mixing bowl with all other ingredients except cottage ham.
- Place bean mix in a dutch oven and put the cottage ham on top, fatty side up if possible.
- Cover and bake for 2.5 hours or so or until thick.
- Slice ham pieces off the bone and serve on beans or stir in, whichever you prefer; discarding the bone.
