Reuben Pretzel Bites

In my case, I am sharing an appetizer baked on a pretzel thin cracker. Because  who doesn’t love a Reuben? Piles of corned beef with gooey melted Swiss cheese, sauerkraut and a schmear of Thousand Island dressing?  Yum.

It’s  a concept I can really get on board with. The end result was a little different than expected though. Instead of the cracker remaining brittle crisp,  it gained a chewy texture. Very similar to the bread on a grilled Reuben. With just a hint of crunch.

Of course if you want full-on crispy, you can stack  the meat and melt it then slide onto the cracker. But I admit I love it just the way they are.

Perfect as a game-day appetizer, you  can make as few or as many that you  want or need. It’s great along cold German beer for the adults or soft drinks for the kids.

And beware- they are a touch more filling than they might appear. So a few of these with  some  chips or deli potato salad would also make a nice lunch.

Ingredients
  

  • 12 pretzel crisps thin crackers
  • 6 ounces thin sliced corned beef
  • 4 ounces Swiss cheese slices
  • 3/4 cup drained sauerkraut
  • 1/3 cup Thousand Island salad dressing

Instructions
 

  • Preheat toaster over to 400F.
  • Line a small baking sheet with nonstick foil.
  • Set out crackers and for each cracker, place 1/2 ounce corned beef chopped or folded, Swiss cheese (3 pieces of cheese from each slice cut into eighths) one tablespoon sauerkraut, and one teaspoon Thousand Island.
  • Bake for 10-15 minutes or until cheese is melted and appetizers are hot.
