Turkey and Cranberry Reuben Sandwich

Turkey and Cranberry Reuben Sandwich is my recipe of the day with my newest blogging group “Sunday Funday”. We get together weekly and take turns with hosting themes.
We had a quick start and turnaround, so for my first event (I will be doing the third Sunday) (or having a guest host) I decided to do a theme of “That Holiday Feeling”. I expect most bloggers have a holiday related recipe or three tucked away. And wouldn’t have any pressure joining in.
For my recipe, I made a turkey reuben sandwich with some leftover cranberry sauce tucked in. To make things copacetic with the kraut I cooked it up with orange instead of apple or beer. I think the orange brings it around to the turkey and cranberry. Cranberry orange always being a great combination. Plus it brightens the flavors.
These are on trimmed bolillo rolls, or you could use French or Italian bread. I wanted to keep the bread lighter in flavor so as not to crowd the other ingredients.
It’s really a tasty sandwich, so I hope you do give it a try. Especially with any leftovers you have this year.Even with a small turkey, I know we will have lots left with our very small group.

Turkey and Cranberry Reuben Sandwich
Ingredients
Seasoned Kraut:
- 8 ounce can kraut rinsed and drained
- 1 tablespoon butter
- 1/2 cup orange juice
- 2 teaspoons brown sugar
Sandwich Ingredients:
- 4- inch sub roll or French bread
- 2 tablespoons jellied cranberry sauce mashed with a fork
- 1 tablespoon mayonnaise
- 1 ounce sliced Swiss cheese
- 3 ounces sliced roast turkey
- 3 tablespoons of the kraut mix
Instructions
- Cook the kraut in butter and orange juice until it is fairly dry.
- Layer sandwich ingredients between the French bread, then press in a grill pan over med-low heat until toasted and crisp.
