Equipment

  • parchment paper

Ingredients
  

  • 1 cup soft unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant espresso
  • 1 cup espresso flavored chocolate chips
  • 1 cup dark chocolate chips
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350F.
  • Cream together the soft butter with the sugars, then add the eggs and vanilla.
  • Once mixed, gradually add the flour, baking soda, salt and instant espresso.
  • Once the dough is smooth, fold in the chocolate chips.
  • Drop by a tablespoon cookie scoop onto a parchment lined baking sheet.
  • Bake for 8-10 minutes until browned around the edges.
  • Cool five minutes on pans, then slide parchment onto a wire rack to finish cooling.
