Equipment

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup cooled melted butter

Instructions
 

  • Preheat oven to 350F.
  • Spray a large muffin pan with baker's release spray.
  • Mix together flour, baking powder, baking soda, and salt.
  • Place cheese in a separate bowl ad toss with a couple tablespoons of the flour.
  • In a third bowl, whisk the eggs, cooled butter and milk.
  • Mix the milk mixture into the flour the fold in the cheese.
  • Divide batter among 15 muffin cavities in the pan.
  • Bake for 20-22 minutes.
  • Cool in the pan five minutes, then turn out and finish cooling on a wire rack.
