I decided to make cheddar cheese muffins this month, as I was crushing on having something savory. I had been making a lot of sweet baked recipes lately, so this was a welcome change.
They are quite simple to make, since most everyone has cheese tucked away somewhere in the fridge. The simple flavors make this perfect as an accompaniment to many meals. Very nice as an alternative to dinner rolls, biscuits, cornbread or other breads. If you like Cheddar Bay biscuits, I am sure you will love these as well.

Cheddar Cheese Muffins
Equipment
- muffin pan
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups shredded cheddar cheese
- 2 large eggs
- 3/4 cup milk
- 1/4 cup cooled melted butter
Instructions
- Preheat oven to 350F.
- Spray a large muffin pan with baker's release spray.
- Mix together flour, baking powder, baking soda, and salt.
- Place cheese in a separate bowl ad toss with a couple tablespoons of the flour.
- In a third bowl, whisk the eggs, cooled butter and milk.
- Mix the milk mixture into the flour the fold in the cheese.
- Divide batter among 15 muffin cavities in the pan.
- Bake for 20-22 minutes.
- Cool in the pan five minutes, then turn out and finish cooling on a wire rack.

Biscuits aren’t hard but muffins sure are easier! I’d make these instead of cheddar bay biscuits anytime!
