Equipment

  • 1 outdoor grill

Ingredients
  

Meat and marinade:

  • 1 pound boneless chicken tenders
  • 1 teaspoon garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon fish sauce
  • 2 tablespoons fresh lime juice
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons Thai sweet chilli sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Sriracha sauce

Peanut Dipping Sauce (satay, yield 1/2 cup)

  • 1/4 cup creamy peanut butter
  • 1/4 cup coconut water or coconut milk
  • 2 tablespoons Thai sweet chilli sauce
  • 1 teaspoon toasted sesame oil
  • 1-1/2 teaspoons Sriracha sauce
  • 1/4 teaspoon grated ginger
  • 1 teaspoons fish sauce
  • 1 teaspoons rice vinegar

Instructions
 

  • Marinate chicken in marinade 3-6 hours or overnight.
  • Drain marinade from chicken.
  • Grill tenders over med-high heat until cooked through.
  • Mix together sauce and use as dipping sauce.
