Chicken Satay with Peanut Dip is my recipe of the day. The chicken is a classic appetizer served with peanut sauce and sometimes cucumber dip.

I didn’t have a lot of chicken so I bypassed the cucumber sauce. If you like having it, you might find a recipe for it here: Thai Cucumber Sauce. I had posted that recipe years ago on another site.
Chicken Satay with Peanut Dip
The little red peppers you see on the chicken can be quite spicy. Spicier than jalapeno. I like them a lot. But if you don’t like it too spicy you can omit. Careful when using fresh peppers anyway as they can vary in spice intensity. Taste and see before serving to your guests.

Chicken Satay with Peanut Dip
Equipment
- 1 outdoor grill
Ingredients
Meat and marinade:
- 1 pound boneless chicken tenders
- 1 teaspoon garlic
- 1 teaspoon grated ginger
- 1 tablespoon fish sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon toasted sesame oil
- 2 tablespoons Thai sweet chilli sauce
- 1 tablespoon brown sugar
- 1 teaspoon Sriracha sauce
Peanut Dipping Sauce (satay, yield 1/2 cup)
- 1/4 cup creamy peanut butter
- 1/4 cup coconut water or coconut milk
- 2 tablespoons Thai sweet chilli sauce
- 1 teaspoon toasted sesame oil
- 1-1/2 teaspoons Sriracha sauce
- 1/4 teaspoon grated ginger
- 1 teaspoons fish sauce
- 1 teaspoons rice vinegar
Instructions
- Marinate chicken in marinade 3-6 hours or overnight.
- Drain marinade from chicken.
- Grill tenders over med-high heat until cooked through.
- Mix together sauce and use as dipping sauce.
