Thai Lime & Chili Cashews

I decided to share my recipe for a copycat version of Trader Joe’s spiced cashews. My husband adores these, and isn’t happy when the store is out of stock.

So I took it upon myself to mix up a seasoning to coat some regular cashews with. The flavor is outstanding and very close to the proprietary TJ mixture.

I managed to find some powdered Tom Yum soup mix in the Asian  foods aisle of my grocery. I passed over the soup mixes that contained liquids. If pressed, look for a Tom Yum ramen noodle packet and save the noodles for something else (like ramen you have made bone broth for).

These will be perfect to serve with cocktails at a NYE party. Or even with a can of seltzer watching a sports game. I would also not be adverse to chopping these to sprinkle on top of pad thai. Go for it and enjoy!

Ingredients
  

  • 10 ounces salted roasted cashews
  • 1 tablespoon peanut oil
  • 2 teaspoons ground dried Thai lime leaves sifted
  • 2 teaspoons Tom Yum soup base seasoning
  • 2 teaspoons white pepper
  • 1/2 teaspoon chili powder

Instructions
 

  • Preheat oven to 200F.
  • Toss cashews with peanut oil.
  • Stir together seasonings and mix with the oiled cashews.
  • Bake in a single layer in the preheated oven for 30 minutes.
  • Allow to cool.

  1. Lovely! We love snacking on nuts and I love finding new recipes to elevate them. This one was very unique for us. I couldn’t find ground, dried lime leaves, so I used fresh lime leaves and gave them a whir in my spice grinder. It didn’t get it as fine as I’m sure was intended but boy oh boy did it impart that lime flavor to the nuts! I had never used a Tom Yum soup base before, either. It adds a really nice spiciness to the cashews.

    • What I do is when the lime leaves are dry, whir them in a spice grinder, then use a fine sifter to get out the bits.
