Thai Grilled Skirt Steak is my recipe of the day. I had bought a skirt steak on deep discount and decided to do a Thai marinade on it. I’d done fajitas not too long ago and wanted something different. Thai was perfect.

What does Thai steak taste like?
Thai flavors encompass a balance of hot, sour, salty and sweet. You will find those flavors here:
Hot: Chilli Paste
Sour: Fresh Lime Juice
Salty: Fish Sauce
Sweet: Brown Sugar
The flavors combine perfectly and the taste is unmistakable. After marinating for several hours, the steak is simply grilled to perfect doneness with a bit of char.
I sliced mine up and served it with a simple side of asparagus. And I made some Pad Thai without meat to serve on the side. It was enjoyed by all.

Thai Grilled Skirt Steak
Equipment
- 1 outdoor grill
Ingredients
Steak:
- 1-1/2 pounds beef skirt steak
Marinade:
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 2 tablespoons fish sauce
- 2 tablespoons Thai sweet chili sauce
- 1 tablespoon sambal chilli paste
- 2 tablespoons fresh lime juice
- 1 teaspoon black pepper
- 1/4 cup brown sugar
- 1/3 cup chopped onion
Instructions
- Combine marinade and add to steak.
- Marinate for 6 hours or overnight.
- Grill to desired temp. I do 135F for med-rare.
- Rest steak for about ten minutes, then cut thinly across the grain.
- Serve with preferred sides. I did grilled asparagus and vegetable pad thai.
