Apple Rhubarb Dump Cake is my recipe of the day. This version uses seasonal rhubarb mixed with apple for a change up from the usual rhubarb pie with any other fruit.

A dump cake is a simple dessert involving a cake mix with other filling and melted butter to create a dessert similar to a cobbler.

How do I make a Dump Cake?

You place the prepared filling, either homemade or a canned pie filling into a baking dish.
This is covered with alternating amounts of cake mix and melted butter.

Why does this recipe work?

Equipment

  • 1 Oblong baking pan

Ingredients
  

Apple-Rhubarb Filling:

  • 12 ounces fresh sliced rhubarb
  • 2 Honeycrisp apples
  • 3 tablespoons lemon juice
  • 2 tablespoons butter
  • 1/4 cup flour
  • 1-1/3 cups brown sugar
  • 1 teaspoon apple pie spice
  • 1/8 teaspoon salt

Dump Cake Extras:

  • 15.25 ounces yellow cake mix
  • 3/4 cup melted butter
  • 1 cup honey oats granola

Instructions
 

  • Preheat oven to 375F.
  • Peel and core apples, then slice. Toss with lemon juice.
  • Cook the apple slices with chopped rhubarb in the butter until apples soften.
  • Stir in the flour, brown sugar, apple pie spice and salt. Allow to thicken.
  • Spray an oblong baking pan with nonstick or grease it.
  • Spread the fruit filling into the dish.
  • Top with half the cake mix, then half the melted butter and repeat.
  • Top with the granola.
  • Bake for 60 minutes.
  • Serve warm or chilled with ice cream.
  • Refrigerate unused portions.
