Easy Mole Chicken Drumsticks

Ingredients
  

Chicken:

  • 6 chicken drumsticks
  • 2 tablespoons olive oil
  • salt and black pepper
  • 2 tablespoons toasted sesame seeds (for garnish)

Quick Mole Sauce (Yield 2 cups)

  • 2 cups chicken broth
  • 3 tablespoons New Mexico chili powder
  • 1.8 ounces Ibarra Mexican chocolate (half a wheel, chopped)
  • 2 tablespoons masa harina
  • 1 tablespoon raisins
  • 1 tablespoon tahini (sesame seed paste)
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon Mexican oregano
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • pinch cloves

Instructions
 

  • Preheat oven to 375F.
  • Rub chicken legs with oil and season with salt and black pepper.
  • Place chicken on a baking sheet and bake for 35-45 minutes or until the internal temperature is 165F.
  • While chicken bakes, whisk and simmer mole sauce ingredients in a saucepan until slightly thickened, about 15 minutes.
  • Add cooked chicken legs to the mole sauce, coating the chicken.
  • Gently heat through, about ten minutes more.
  • Garnish with toasted sesame seeds.
  • Serving suggestion: serve chicken with rice, black beans, and tortillas.
