Chicken:

Quick Mole Sauce (Yield 2 cups)

chicken broth

New Mexico chili powder

Ibarra Mexican chocolate
(half a wheel, chopped)

masa harina

tablespoon
raisins

tablespoon
tahini
(sesame seed paste)

teaspoon
cinnamon

teaspoon
Mexican oregano

teaspoon
sugar
1/2
teaspoon
salt

teaspoon
black pepper
1/4
teaspoon
ground cumin
pinch
cloves
Instructions
Preheat oven to 375F.
Rub chicken legs with oil and season with salt and black pepper.
Place chicken on a baking sheet and bake for 35-45 minutes or until the internal temperature is 165F.
While chicken bakes, whisk and simmer mole sauce ingredients in a saucepan until slightly thickened, about 15 minutes.
Add cooked chicken legs to the mole sauce, coating the chicken.
Gently heat through, about ten minutes more.
Garnish with toasted sesame seeds.
Serving suggestion: serve chicken with rice, black beans, and tortillas.
