Easy Mole Chicken Drumsticks is my recipe of the day with the Choctoberfest blogging group, Which includes a giveaway for a KitchenAid mixer over and above all the delicious recipes.
I love making easy chicken dinners. Besides that, the sauce is great for chocolate lovers in an unexpected way. You will love this on rice, with black beans, or inside tortillas.

Easy Mole Chicken Drumsticks
Ingredients
Chicken:
- 6 chicken drumsticks
- 2 tablespoons olive oil
- salt and black pepper
- 2 tablespoons toasted sesame seeds (for garnish)
Quick Mole Sauce (Yield 2 cups)
- 2 cups chicken broth
- 3 tablespoons New Mexico chili powder
- 1.8 ounces Ibarra Mexican chocolate (half a wheel, chopped)
- 2 tablespoons masa harina
- 1 tablespoon raisins
- 1 tablespoon tahini (sesame seed paste)
- 3/4 teaspoon cinnamon
- 1/2 teaspoon Mexican oregano
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- pinch cloves
Instructions
- Preheat oven to 375F.
- Rub chicken legs with oil and season with salt and black pepper.
- Place chicken on a baking sheet and bake for 35-45 minutes or until the internal temperature is 165F.
- While chicken bakes, whisk and simmer mole sauce ingredients in a saucepan until slightly thickened, about 15 minutes.
- Add cooked chicken legs to the mole sauce, coating the chicken.
- Gently heat through, about ten minutes more.
- Garnish with toasted sesame seeds.
- Serving suggestion: serve chicken with rice, black beans, and tortillas.

OMG this is a five-star recipe!! I considerably reduced the amount of chilli powder, but otherwise followed the instructions to the letter. Very easy to make, but the full flavour of a rich mole sauce. Thanks for sharing, this is so going to be a keeper!
