Basque Chicken

This month the group decided on the  baking of Spain.

For my selection I decided on Basque Chicken, which has both Spanish  and French  influences, as it comes from  the mountainous regions of the Pyrenees which  falls within  both countries.

Le Creuset Roasting Pan

I  love baked chicken dishes anyway so it wasn’t  a difficult choice for me. And cooking  with wine. I do love that.

All the flavors infuse in  there, from the chicken and peppers to the tomatoes and olives.

What a perfect dish  to pile atop any  respectful base such as rice, noodles, or polenta. And sop up the juices with a thick slice of crusty French bread. Just thinking on it makes me hungry again! How about you?

  1. That looks as delicious as it is vibrant nestled in the baking dish. I love a dinner that is simple in prep but elegant in flavor. Thank you for hosting.

  2. That is a gorgeous dish, beautifully arranged in the roasting pan. It’s hard for me to make chicken look pretty in photos. You sure did!

  3. That looks like a perfect potluck dish. When and if, we can gather in groups again, I’ll have to try making this. Or I can just have a couple friends come over and I can make this for them.
