Today I am offering my recipe for Song Long chicken, which is a simple roasted chicken with  an easy dry rub. It is perfectly healthy and  good for eating with whatever Asian foods you have to go with, such as stir-fries,  fried rice, etc. The leftovers, if you have any, also are great added to things like soup, Asian chicken salad, or fried rice.

It is inspired by one of my mysterious phone notes to myself,  forgotten until I no longer recall when it was I made the note. Sometimes I put a note on the phone to myself so I don’t forget about it. And this one was just titled Song Long (chicken) and a list of spices. Song Long is actually a Vietnamese restaurant here in Cincinnati. But they don’t serve roast chicken. At one time they had the most fabulous fried chicken, but stopped serving it. The mother of the owner used to like to come in and prepare that (it is a family operation) but over time, it was time-consuming so they took it off the menu. And still, that yummy chicken has no connection to the note.

From  time to time when I visit there, I have been known to chit chat about food with the staff, that is, when I am not filling my mouth with something like goi cuon (soft rolls) or pho. Usually it is about pronunciation of certain items which I often forget almost as fast as I speak them. But we may have talked about something or the other. Or not.

But I came across this note which I actually emailed myself and it became lost in a blizzard of emails. When cleaning out one of the boxes, it suddenly popped up. But do with it as I would, I thought the spices would make a nice rub, and proceeded from there. I did add some soy and sesame- so not totally dry, but felt those did  benefit the chicken.

Song Long Chicken
Ingredients:

  • 1 (3-5 pound) roasting chicken
  • 2 tablespoons  toasted sesame oil
  • 1 tablespoon soy sauce
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 2 teaspoons five spice powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method:

  • Preheat oven to 475°F.
  • Rinse chicken and pat dry. Tie legs together with kitchen twine.
  • Mix sesame oil with soy sauce and brush all  over the chicken.
  • Mix seasonings in a small bowl then rub liberally over chicken.
  • Place chicken on a roasting rack in a roasting pan and roast for 15 minutes at 475°F.,  then reduce heat to 375°F, and roast for 60-75 minutes more, or until internal temperature reaches 165°F.
  • Rest chicken for 10-15 minutes before carving, cutting away twine from legs.
