Southern Cabbage Casserole is my recipe of the day. New Year’s Day is upon us and cabbage is on sale everywhere. That is a lucky food if nothing else!

This casserole is an old-fashioned style recipe which is similar in some ways to a green bean casserole. It does use a condensed canned soup as part of the sauce, but that can be switched out with an onion seasoned Bechamel sauce if you prefer.
You will find many similar recipes online. I’ve seen some with mushroom soup but I prefer onion, as I think it tastes better. In addition, I think the bake times are way off on some of the others. I know the first time I made one of these with a similar time the cabbage was basically still raw.
So if you don’t like your casserole really crunchy (in the vegetables, not the topping) you will stick to my guidance on that. I like my cabbage crunchy in cole slaw but that’s about it. How about you?

Southern Cabbage Casserole
Equipment
- 1 Oblong casserole dish (or lasagna pan)
Ingredients
Casserole Base:
- 2 pounds chopped green cabbage
- 1 large onion (sliced)
- salt and black pepper
- 10.5 ounces canned cream of onion condensed soup
- 1 cup mayonnaise
- 2 teaspoons minced garlic
Crunchy Topping:
- 4 ounces shredded cheddar cheese
- 3 ounces Ritz cracker (crushed into crumbs; 2 short sleeves)
- 6 slices cooked bacon (crumbled)
- 1/2 cup melted butter
Instructions
- Preheat oven to 350F.
- Toss together cabbage, onions, salt and black pepper and place in the bottom of a rectangular 9x13-inch casserole dish.
- Stir together the condensed soup and mayonnaise and spread over the cabbage as best as you can.
- Cover with foil and bake for 30 minutes.
- In a small mixing bowl, toss together the cheese, cracker crumbs, bacon, and melted butter.
- Remove foil cover from casserole and sprinkle on the topping.
- Bake for another 30-40 minutes or until topping is golden and cabbage is tender.
