Ingredients
  

Chicken:

  • 1 pound boneless chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 2 fresh lemons halved
  • nonstick cooking spray
  • 1 tbsp Italian parsley chopped (for garnish)

Sauce:

  • 3/4 cup chopped red onion
  • 1 teaspoon minced garlic
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon Italian seasoning
  • pinch red pepper flakes
  • 1/4 cup nonpareil capers small ones
  • 1/4 cup fresh lemon juice
  • 1/4 cup dry white wine

Instructions
 

  • Flatten chicken with a mallet and drizzle with oil, then seasonings.
  • Cook on an oiled grill grate over moderate heat, until the meat probes to 165F.
  • Spray halves of lemons with spray and place cut side down on the grill, cooking until lightly browned.
  • Remove all from grill and let rest, covered, while you prep the sauce.
  • Cook the onion and garlic in olive oil until softened.
  • Add remaining ingredients and cook for a few minutes more.
  • Serve sauce over chicken pieces, garnished with parsley, and served with cut lemons on the side to squeeze over the meat.
