Today’s Recipe: Grilled Chicken Piccata
My recipe today is a take on the classic Italian chicken recipe. However, this chicken is cooked outdoors for the extra grill flavor and slight smokiness. I served this with the asparagus I made on Monday.
Other good sides are rice pilaf. Or a simple garlic pasta made with vermicelli or angel-hair.
Serving this on grilled French bread for sandwiches is another possible option. In any case, everyone will enjoy this with the usual cookout sides. Of course, including tossed salad.

Equipment
- 1 outdoor grill
Ingredients
Chicken:
- 1 pound boneless chicken breast
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 2 fresh lemons halved
- nonstick cooking spray
- 1 tbsp Italian parsley chopped (for garnish)
Sauce:
- 3/4 cup chopped red onion
- 1 teaspoon minced garlic
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon Italian seasoning
- pinch red pepper flakes
- 1/4 cup nonpareil capers small ones
- 1/4 cup fresh lemon juice
- 1/4 cup dry white wine
Instructions
- Flatten chicken with a mallet and drizzle with oil, then seasonings.
- Cook on an oiled grill grate over moderate heat, until the meat probes to 165F.
- Spray halves of lemons with spray and place cut side down on the grill, cooking until lightly browned.
- Remove all from grill and let rest, covered, while you prep the sauce.
- Cook the onion and garlic in olive oil until softened.
- Add remaining ingredients and cook for a few minutes more.
- Serve sauce over chicken pieces, garnished with parsley, and served with cut lemons on the side to squeeze over the meat.
