Grilled Chicken Pinchitos, or little skewers, are an Uruguayan delight of marinated chicken kebabs grilled and served with chimichurri dip.

Grilled Chicken Pinchitos is my recipe of the day with the blogging group Eat the World. We join hands once per month to post new delicious recipes from other cuisines. And this month we travel to Uruguay in South America. Even if only from our kitchens.
Pinchitos refers to “little skewers” and in this case it is grilled chicken, which is done up in a simple savory marinade. I serve it with a chimichurri sauce, which you can either make yourself or buy.
A Green Side
But these kebabs also taste delicious on their own. They do need something to go with, however, so I finished out my plate with grilled asparagus. To those, I trimmed the stalks, then tossed them in olive oil, salt, pepper, and garlic powder, and threw them on the grill.
Those also taste great on their own. But they also taste great dipped in chimichurri.
A Not So Green Side
And I finished out my plate with some fresh pineapple. They were on sale this week for a buck apiece so I grabbed two. It was a perfect complement to the plate. And all very healthy.
But the pineapple does not go with the chimichurri. Imagine that. (laughs)
And the Perfect Ending
I finished out my healthy meal with a plate of Capirotada de Leche, which is a Mexican bread pudding drowned in dulce de leche and atole made from piloncillo syrup. Grilled Chicken Pinchitos
Equipment
- Grill
Ingredients
- 1-1/2 pounds boneless chicken thighs cut into chunks
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4-6 wooden skewers soaked in water for one hour or more
- 1/2 cup prepared chimichurri sauce optional dip
Instructions
- Soak wooden skewers in water several hours before using.
- Chop chicken into chunks and mix with marinade; rest refrigerated for several hours.
- Thread chicken onto skewers and grill over moderately hot coals, until cooked through, about 15 minutes.
- Serve with chimichurri sauce as a dip if you like.

I’m so glad barbecue season is starting, because I can’t wait to try out your chicken Pinchitos. I love the simple combination of spices on them, but I’m guessing there’s a lot of fantastic flavour! Yum.

This is excellent! The marinated chicken is wonderful all on it’s own; that is the way my husband ate it since he isn’t a fan of chimichurri. He kept saying how much he loved the flavor of the chicken. My son and I ate it with the chimichurri sauce mixed with some chopped avocado and thought it was amazing. Thank you!
