Instructions
Spice Paste:
Pulse the ingredients for the spice paste in a food processor until paste is smooth, adding a 1-2 tbsp water in the chute if needed if too thick.
Place paste in a small skillet with 2 more tbsp coconut oil and briefly fry until it dries a little and lightly browns.
Ribs:
Place spice paste in the Instant Pot or slow cooker with the ribs and coconut water and herbs.
Seal Instant Pot and cook on manual/high for 45 minutes, then use the quick release.
Sauce:
Stir together sauce ingredients until smooth and set aside until needed.
Sambal Matah:
Combine ingredients in a small bowl and set aside.
Finishing:
Heat grill to moderately high and grill ribs, brushing with sauce until sauce sets and ribs are lightly charred.
Serve ribs with rice.
