Iga Bakar (Indonesian BBQ Beef Short Ribs) is my recipe of the day with the blogging group Sunday Funday. We meet once per week to post recipes on various topics. This week we are sharing Indonesian recipes. Glad you could join us!

I chose to make Iga Bakar, which are Beef Short ribs that are first cooked in the Instant Pot. Then finished out on the grill with a homemade Balinese BBQ sauce. These go best with rice.

There is also a fresh tomato sambal served over the top of the ribs as a sort of pseudo salsa.

The ingredients list on the recipe is a *bit* long. I imagine the 5-ingredient recipe purists might have an aneurysm when they see it. But really, if you prepare the sauce ahead and do prep, it’s not a biggie. I wouldn’t make that sambal too far ahead though. It has fresh That chilies so the longer that sits, the more the heat permeates. You could leave the peppers out on the side and add those just before serving. Or omit altogether.

The ribs are exceedingly delicious with or without those hot Thai peppers. And this meal is worth every minute you spend with it in the kitchen. The flavor is exotic, gourmet, and over-the-top. I mean, I don’t like too much work in the kitchen either. I’m human like everyone else and would rather be sipping Mai Tai’s with my dinner guests and having good conversation.

But I will be making this one. Again, and again. You’ll understand when you taste it.

Equipment

  • Instant Pot; Food Processor with chopping blade; Outdoor Grill

Ingredients
  

Iga Bakar/Ribs

  • 3 pounds beef chuck short ribs
  • 16 ounce can coconut water

Spice Paste

  • 4 ounces shallots
  • 1 tablespoon minced garlic
  • 1-1/2 teaspoons coriander powder
  • 2 tablespoons coconut oil
  • 2 teaspoons brown sugar
  • 1/2 lime seeds removed

Herbs

  • 2 bay leaves
  • 3 Thai lime leaves
  • 1 stalk lemongrass light parts
  • 2 inches fresh ginger sliced
  • 1 tablespoon salt

BBQ Sauce

  • 3 tablespoons beef broth from the instant pot
  • 1/4 cup kecap manis Indonesian dark sweet soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon granulated sugar
  • 3 tablespoons fresh lime juice
  • 1 tablespoon sambal oelek
  • 2 tablespoons ketchup
  • 1/4 teaspoon basil

Fresh Tomato Sambal (Sambal Matah)

  • 4 fresh red Thai chilies
  • 1/4 cup chopped shallots
  • 2 cloves garlic sliced
  • 1 scallion chopped
  • 1 tablespoon sugar
  • 3 Thai lime leaves chiffonade sliced (stem removed)
  • 2 tablespoons thinly sliced lemongrass white part
  • 1 roma tomato diced
  • 1 tablespoon chopped cilantro

Instructions
 

Spice Paste:

  • Pulse the ingredients for the spice paste in a food processor until paste is smooth, adding a 1-2 tbsp water in the chute if needed if too thick.
  • Place paste in a small skillet with 2 more tbsp coconut oil and briefly fry until it dries a little and lightly browns.

Ribs:

  • Place spice paste in the Instant Pot or slow cooker with the ribs and coconut water and herbs.
  • Seal Instant Pot and cook on manual/high for 45 minutes, then use the quick release.

Sauce:

  • Stir together sauce ingredients until smooth and set aside until needed.

Sambal Matah:

  • Combine ingredients in a small bowl and set aside.

Finishing:

  • Heat grill to moderately high and grill ribs, brushing with sauce until sauce sets and ribs are lightly charred.
  • Serve ribs with rice.

  1. I think all of our recipes will be a bit longer than usual. They love their warm spices in Indonesia as is evident in the wonderful flavor that develops.
