Jalapeno Glaze:

fresh jalapenos
seeds removed and coarsely chopped

tablespoons
butter
1/2
teaspoon
minced garlic
pinch
salt

red jalapeno jelly
1
ounce
fresh lime juice
about one lime

teaspoon
soy sauce
Instructions
Chicken:
Preheat oven to 400F.
Dredge chicken pieces in flour, shaking off excess.
Brown chicken pieces on both sides in 1/2-inch hot oil then drain.
Place chicken pieces on a baking sheet fitted with a rack.
Bake for 45 minutes or until chicken has an internal temp of 165F near the bone.
Rest chicken for ten minutes to allow it to come up to a perfect temperature.
Spoon glaze over chicken.
Jalapeno Glaze:
While chicken bakes, prepare the glaze.
Saute the jalapenos and garlic in butter about 4-5 minutes or until they soften some.
Stir in remaining ingredients.
Allow the jelly to melt and stir until thickened.
Keep glaze warm and thin with a little water if it sits too long waiting for the chicken.
