Jalapeno Lime Glazed Chicken

Jalapeno Lime Glazed Chicken is my recipe of the day with my blogging group Baking Bloggers. We meet up once per month to post on various food topics and share a recipe. We’ll take a vote and whatever one the group decides is it.
This month we are discussing and sharing recipes for using jams and preserves in baking. I decided to share my recipe for Jalapeno Lime Glazed Chicken with you. It is a riff off another recipe I did years ago at Recipezaar. That recipe was more of a quick stir-fry in a skillet.
This one I happened to make using bone-in chicken breasts. The idea is to bread them, brown in a skillet and then finish in the oven. It makes for a nice oven-fried type of chicken.
The sauce is made on the stove top using a jalapeno pepper jelly and a few other ingredients, such as fresh jalapenos. The sauce is then spooned over the finished chicken. The best part about that is if you have kids or someone who doesn’t eat spicy, you can just leave that part off and still have some tasty chicken.
The breast I had were ginormous (I did try for the smallest ones I could find). You can use other pieces. Just watch the timing on smaller ones as the overall bake time will be less.
You can serve this with steamed rice, as I have. Or perhaps you have anther idea for what you’d like with it.

Jalapeno Lime Glazed Chicken
Ingredients
Chicken and Coating:
- 2-1/2 pounds bone-in chicken breast pieces 2 large
- 1/2 cup all purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Jalapeno Glaze:
- 2 fresh jalapenos seeds removed and coarsely chopped
- 2 tablespoons butter
- 1/2 teaspoon minced garlic
- pinch salt
- 2/3 cup red jalapeno jelly
- 1 ounce fresh lime juice about one lime
- 1/2 teaspoon soy sauce
Instructions
Chicken:
- Preheat oven to 400F.
- Dredge chicken pieces in flour, shaking off excess.
- Brown chicken pieces on both sides in 1/2-inch hot oil then drain.
- Place chicken pieces on a baking sheet fitted with a rack.
- Bake for 45 minutes or until chicken has an internal temp of 165F near the bone.
- Rest chicken for ten minutes to allow it to come up to a perfect temperature.
- Spoon glaze over chicken.
Jalapeno Glaze:
- While chicken bakes, prepare the glaze.
- Saute the jalapenos and garlic in butter about 4-5 minutes or until they soften some.
- Stir in remaining ingredients.
- Allow the jelly to melt and stir until thickened.
- Keep glaze warm and thin with a little water if it sits too long waiting for the chicken.

Oven “fried” chicken with jalapeño glaze sounds and looks like something everyone in my family would love, especially since you added extra fresh jalapeños, Sue. Yum!

I had a pepper mishap this summer where I ended up with multiple pounds of hot peppers and thus, multiple jars of hot pepper jelly. I’m definitely making this right away.
The melted pepper jelly makes a great dip for things like jalapeno poppers (which is here I use pepper jelly most)

I already put pepper jelly on my grocery list, thanks to Wendy, and now I’ve got another recipe I can use it in. I’ve always got jalapeno’s on hand, either fresh or frozen. I wonder how my hot hatch chiles would work in this. hmmmm
